Ingredients
400gudon noodles
1tbspolive oil
300gchicken breastsliced into strips
1broccolicut into small florets
1capsicumsliced finely
1onionsliced finely
2cupsfrozen peas and corn
100ggreen beanschopped
Sauce
⅓cupsoy sauce
3tbspoyster sauce
1tbspbrown sugar
1tbspfresh gingerfinely grated
2clovesgarlicminced
1tspsesame oil
¼tspcrushed red pepper flakes
¼tspground black pepper
Instructions
In a small bowl, whisk together all the saue ingredients. Set aside.
Bring medium saucepan of water to the boil. Add broccoli florets and boil for 2 minutes until just tender. Drain and set aside.
Heat olive oil in a large frying pan over high heat. Fry chicken for 2-3 minutes on each side until brown and just cooked through. Set aside.
Add onion and capsicum to the frying pan. Saute for 2-3 minutes until just soft. Add in peas, corn, beans and broccoli and toss until tender. Add in noodles, chicken and sauce. Toss everything together for 2-3 minutes until well combined and hot. Serve immediately.
