Ingredients

  • 400 g udon noodles
  • 1 tbsp olive oil
  • 300 g chicken breast sliced into strips
  • 1 broccoli cut into small florets
  • 1 capsicum sliced finely
  • 1 onion sliced finely
  • 2 cups frozen peas and corn
  • 100 g green beans chopped

Sauce

  • â…“ cup soy sauce
  • 3 tbsp oyster sauce
  • 1 tbsp brown sugar
  • 1 tbsp fresh ginger finely grated
  • 2 cloves garlic minced
  • 1 tsp sesame oil
  • ¼ tsp crushed red pepper flakes
  • ¼ tsp ground black pepper

Instructions

  • In a small bowl, whisk together all the saue ingredients. Set aside.
  • Bring medium saucepan of water to the boil. Add broccoli florets and boil for 2 minutes until just tender. Drain and set aside.
  • Heat olive oil in a large frying pan over high heat. Fry chicken for 2-3 minutes on each side until brown and just cooked through. Set aside.
  • Add onion and capsicum to the frying pan. Saute for 2-3 minutes until just soft. Add in peas, corn, beans and broccoli and toss until tender. Add in noodles, chicken and sauce. Toss everything together for 2-3 minutes until well combined and hot. Serve immediately.
