Ingredients

  • 85 g vermicelli noodles
  • 2 Tbsp fish sauce
  • 1 lime juiced
  • 1 garlic cloves
  • 2 tsp vegetable oil
  • 2 tsp brown sugar
  • ½ tsp chilli flakes
  • 2 C bean sprouts
  • 1 carrot
  • ½ cucumber
  • 2 spring onions
  • 200 g shredded chicken
  • ¼ C peanuts
  • 3 tbsp fresh coriander
  • 3 Tbsp sweet chilli sauce

Instructions

  • Soak the noodles in boiling water for 5 minutes. Then rinse the noodles under cold water and drain well.
  • Meanwhile, whisk the fish sauce, lime juice, garlic, oil, sugar and chili together in a bowl.
  • Toss together noodles, sprouts, carrots, cucumber, spring onion, chicken, peanut and coriander. Stir through the dressing and serve drizzled with sweet chili sauce.

Notes

Diabetic Friendly: Leave out the brown sugar. You won't notice the difference.
