Ingredients
85gvermicelli noodles
2Tbspfish sauce
1lime juiced
1garlic cloves
2tspvegetable oil
2tspbrown sugar
½tspchilli flakes
2Cbean sprouts
1carrot
½cucumber
2spring onions
200gshredded chicken
¼Cpeanuts
3tbspfresh coriander
3Tbspsweet chilli sauce
Instructions
Soak the noodles in boiling water for 5 minutes. Then rinse the noodles under cold water and drain well.
Meanwhile, whisk the fish sauce, lime juice, garlic, oil, sugar and chili together in a bowl.
Toss together noodles, sprouts, carrots, cucumber, spring onion, chicken, peanut and coriander. Stir through the dressing and serve drizzled with sweet chili sauce.
Notes
Diabetic Friendly: Leave out the brown sugar. You won't notice the difference.
