Ingredients

  • 400 g chicken breast

First marinade

  • 1 garlic cloves
  • 2 Tbsp ginger
  • ½ lime juiced
  • 1 tsp salt

Second marinade

  • 2 garlic cloves
  • ¼ C mint
  • ½ C fresh coriander
  • 2 green chilli
  • 2 cm ginger
  • ½ tsp turmeric
  • ½ tsp ground cumin
  • ½ tsp pepper
  • ½ tsp cinnamon
  • 2 Tbsp Greek yoghurt
  • 1 Tbsp cream
  • 1 Tbsp vegetable oil

Salad

  • ½ lettuce torn into peices
  • 2 tomatoes segmented
  • ½ cucumber cut into half moons
  • 100 g feta crumbled

Dressing

  • ½ C Greek yoghurt
  • 1 tsp Dijon mustard
  • 1 Tbsp olive oil
  • ½ lime juiced

Instructions

  • Mix together all ingredients for the first marinade in a medium bowl. Mix well and set aside for 10-20 minutes.
  • Meanwhile, in a blender pulse all ingredients for the second marinade with 1 Tbsp of water.
  • Coat the chicken in the green paste and marinate for an hour.
  • Preheat oven to 180°C. Make the chicken pieces into kebabs and bake for 20-25 minutes, or until cooked through.
  • In the meantime, combine all the dressing ingredients and slice the vegetables for the salad. Toss together.

Notes

Low Salt: Leave the feta out of this recipe to enjoy a delicious and very low salt meal. 
Diabetic: Skip the cream to reduce the fat content of this meal. You won't notice the difference.
