Ingredients
400gchicken breast
First marinade
1garlic cloves
2Tbspginger
½limejuiced
1tspsalt
Second marinade
2garlic cloves
¼Cmint
½Cfresh coriander
2green chilli
2cmginger
½tspturmeric
½tspground cumin
½tsppepper
½tspcinnamon
2TbspGreek yoghurt
1Tbspcream
1Tbspvegetable oil
Salad
½lettucetorn into peices
2tomatoessegmented
½cucumbercut into half moons
100gfetacrumbled
Dressing
½CGreek yoghurt
1tspDijon mustard
1Tbspolive oil
½lime juiced
Instructions
Mix together all ingredients for the first marinade in a medium bowl. Mix well and set aside for 10-20 minutes.
Meanwhile, in a blender pulse all ingredients for the second marinade with 1 Tbsp of water.
Coat the chicken in the green paste and marinate for an hour.
Preheat oven to 180°C. Make the chicken pieces into kebabs and bake for 20-25 minutes, or until cooked through.
In the meantime, combine all the dressing ingredients and slice the vegetables for the salad. Toss together.
Notes
Low Salt: Leave the feta out of this recipe to enjoy a delicious and very low salt meal. Diabetic: Skip the cream to reduce the fat content of this meal. You won't notice the difference.
