Ingredients

  • 1 onion
  • 1 garlic cloves
  • 200 g chorizo
  • 800 g butter beans
  • 120 g spinach
  • ½ C cream
  • 1 tsp lemon juice
  • 4 eggs

Instructions

  • Preheat the oven to 200°C.
  • Fry the onion and garlic in a large oven-proof frying pan over medium heat for 4-5 minutes.
  • Add the chorizo and butter beans, frying for 3-4 minutes or until golden brown.
  • Add the spinach and allow it to wilt before pouring in the cream. Simmer for 5 minutes or until the spinach is cooked and the cream has reduced slightly. Stir through the lemon juice and seasoning.
  • With a spoon, make hollows in the mixture and break in the eggs.
  • Season the eggs with salt and pepper then place the frying pan in the oven to bake for 5-8 minutes (or until the eggs are done to your preference). Remove from the oven and serve immediately.

Notes

Low Salt/ Vegetarian: Leave out the chorizo to enjoy low salt tasty breakfast or light main meal.
Heart Healthy/Low Fat: Leave out the chorizo to enjoy a low fat, heart healthy breakfast or light meal.
