Ingredients

  • 400 g hokkien noodles
  • 2 Tbsp vegetable oil
  • 500 g beef rump steak
  • 4 garlic cloves minced
  • 1 Tbsp ginger minced
  • 1 onion sliced
  • 1 capsicum thinly sliced
  • 1 carrot thinly sliced
  • 1 broccoli small florets
  • ¼ cauliflower small florets

Marinade

  • 1/4 C soy sauce
  • 2 Tbsp water
  • 1 Tbsp honey
  • 2 tsp rice vinegar

Instructions

  • Combine all the sauce ingredients in a small bowl and mix well. Toss in the beef and set aside for 10 minutes.
  • In a large bowl, cover noodles with boiling water and set aside to soften for a few minutes.
  • In a large saucepan balance broccoli and cauliflower florets in boiling water for 3 minutes until just tender. Drain and set aside.
  • Heat 1 tablespoon of oil in a large frying pan over high heat. Scoop beef out of the marinade and quickly fry for 1- 2 minutes until just brown. Set aside.
  • In the same pan, add remaining oil and sauté garlic, ginger, onions, capsicum and carrots for 3-4 min until softened. Then add the broccoli, cauliflower, drained noodles and marinade. Toss everything to coat and cook until heated through. Serve immediately.

Notes

Diabetic Friendly: Half the quantity of soy sauce and honey in this recipe. You'll hardly notice the difference.
