Ingredients
400ghokkien noodles
2Tbspvegetable oil
500gbeef rump steak
4garlic clovesminced
1Tbspgingerminced
1onionsliced
1capsicumthinly sliced
1carrotthinly sliced
1broccolismall florets
¼cauliflowersmall florets
Marinade
1/4Csoy sauce
2Tbspwater
1Tbsphoney
2tsprice vinegar
Instructions
Combine all the sauce ingredients in a small bowl and mix well. Toss in the beef and set aside for 10 minutes.
In a large bowl, cover noodles with boiling water and set aside to soften for a few minutes.
In a large saucepan balance broccoli and cauliflower florets in boiling water for 3 minutes until just tender. Drain and set aside.
Heat 1 tablespoon of oil in a large frying pan over high heat. Scoop beef out of the marinade and quickly fry for 1- 2 minutes until just brown. Set aside.
In the same pan, add remaining oil and sauté garlic, ginger, onions, capsicum and carrots for 3-4 min until softened. Then add the broccoli, cauliflower, drained noodles and marinade. Toss everything to coat and cook until heated through. Serve immediately.
Notes
Diabetic Friendly: Half the quantity of soy sauce and honey in this recipe. You'll hardly notice the difference.
