Ingredients
400grice noodles
1courgette
1capsicum
1capsicum
2carrot
2Tbspvegetable oil
1eggs
½Cpeanuts
½Cfresh coriander
Sauce
3Tbspfish sauce
3Tbspbrown sugar
3Tbspchicken stock
2Tbspwhite vinegar
1Tbspsoy sauce
1tspchili flakes
Instructions
Cook noodles according to package instructions and prepare the vegetables.
Combine the sauce ingredients in a small bowl.
Heat 1 tbsp of oil over medium high heat. Add the vegetables and stir fry for 2-3 minutes. Set aside.
Add another tablespoon of oil to the pan and stir fry the drained noodles for 3-4 minutes.
Pour the beaten egg into the pan and toss through the noodles until just cooked. Add the vegetables and sauce in and toss everything until heated through. Garnish with peanuts and coriander and serve.
Notes
Gluten-Free: Soy sauce often contains gluten. Ensure you read the label to check if the product is GF. Tamari or coconut aminos are a great GF alternative.
