Ingredients
Chicken patties
500gchicken mince
1courgette
2garlic cloves
¾tspsalt
½tsppepper
¼tsponion powder
1eggs
¼Cflour
1 ½Tbspvegetable oil
Side salad
60gspinach
4tomatoes
½cucumber
1carrotgrated
2tbspolive oil
2tbspbalsamic vinegar
To serve
200mltomato sauce
Instructions
To make the chicken patties, combine all ingredients (except oil) and mix until just combined.
Form into small patties and set aside.
Heat oil in a large frying pan over medium-high heat. Cook patties for 4-5 minutes on each side to ensure the chicken is cooked through.
For the salad, prepare the vegetables and toss in a large serving bowl with balsamic vinegar and olive oil. Serve alongside patties with tomato sauce for the kids.

Diabetic Friendly: Eliminate the tomato sauce from this meal.
