Ingredients
Lamb kofta
½onion
2garlic cloves
1Tbspparsley
1Tbspdill
1tspground cumin
1½ tspsalt
¼tsppepper
500glamb mince
Tabbouleh
1lemonjuice and zest
150gbulgur wheat
2Cparsleychopped finely
2Cmintchopped finely
2tomatoesdiced
½cucumberdiced
5spring onionssliced finely
Instructions
Preheat BBQ on high.
Prepare bulgur wheat according to packet instructions.
Combine all the lamb kofta ingredients in a large bowl. Mould into sausage shapes about 2.5cm thick and thread onto skewers. BBQ for 6 minutes until cooked through and brown on all sides.
When bulgar wheat is ready, toss with lemon juice and zest, parsley, mint tomatoes, cucumber and spring onions. Serve alongside koftas.
