Ingredients

Vegie burger patties

  • 300 g chickpeas
  • 1 onion
  • 5 garlic cloves
  • 1 C parsley
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 1 tsp baking powder

Burger ingredients

  • 4 wholemeal burger buns
  • 3 tomatoes
  • ½ cucumber
  • 1 C cheese
  • ½ C mayonnaise

Kumara chips

  • 500 g kumara
  • 2-3 Tbsp vegetable oil
  • ½ tsp cayenne pepper
  • 1 tsp salt
  • 1 tsp pepper

Instructions

  • To prepare the chickpea patties, peel and slice onion and place in a food processor. Add chickpeas, garlic, parsley, salt, pepper, paprika and cumin. Blend together. Then, add in flour and baking powder, mix in by hand until a dough-like texture forms and place in fridge for about an hour.
  • Preheat the oven to 180°C. To prepare the kumara chips, slice and coat in oil, cayenne pepper, salt and pepper. Place on a lined baking tray and in the oven to cook for 20-25 minutes.
  • Preheat a large frying pan with some vegetable oil. Remove the chickpea dough from the fridge and shape into patties. Place the chickpea patties in the pan and cook on medium heat for 3-4 minutes, until the bottom turns crispy and golden-brown. Flip the patties over and cook on the other side for another 3-4 minutes. Remove from pan and set aside.
  • Prepare the vegetables for the burgers, assemble burgers and serve with kumara chips.

Notes

Heart Healthy: Swap the mayo for hummus or avocado.
