Ingredients

Chicken Patties

  • 400 g chicken mince
  • ½ C breadcrumbs
  • 1 eggs
  • ¼ C sundried tomatoes
  • 2 tbsp basil pesto
  • ¼ tsp salt
  • ¼ tsp pepper
  • 2 Tbsp vegetable oil

Open Sandwich

  • 100 g mozzarella cheese
  • 1 ciabatta loaf
  • 1 tbsp olive oil
  • 1 C spinach
  • 4 tomatoes
  • 4 tbsp basil pesto

Instructions

  • In a large bowl combine chicken patty ingredients. Use your hands to mix the ingredients together and form into 4 patties.
  • Heat oil in a frying pan over medium-high heat and cook patties for 5-7 minutes per side or until cooked through.
  • Remove the frying pan from the heat and top each patty with a slice of mozzarella. Cover with a lid and leave for 5 minutes to let the cheese melt.
  • Meanwhile, slice the ciabatta in half, brush with olive oil and grill on high until golden. Top ciabatta with spinach, a chicken mozzarella, some tomato slices and a drizzle of pesto. Serve immediately.
