Ingredients

  • 400 g short crust pastry
  • 3 Tbsp butter
  • 1 onion diced
  • 300 g spinach frozen
  • 4 eggs
  • 250 g cottage cheese
  • 1 C milk
  • ¼ tsp dried nutmeg
  • ½ tsp salt
  • ½ tsp pepper

Instructions

  • Preheat the oven to 200°C. Roll out the pastry and lay into a greased pie dish.
  • Melt the butter in a frying pan over medium heat and sauté the onion until soft. Add the frozen spinach and toss together for 2 - 4 minutes.
  • Meanwhile, whisk together cottage cheese, milk, eggs, salt, pepper and nutmeg. add to the pan along with the cottage cheese, oregano, salt and pepper.
  • Put spinach mixture into the pie dish and pour over egg mixture. Bake in the oven for 40 - 45 minutes or until center is just firm and pastry is cooked through.
