Ingredients

Chicken patties

  • 500 g chicken mince
  • 1 courgette
  • 2 garlic cloves
  • ¾ tsp salt
  • ½ tsp pepper
  • ¼ tsp onion powder
  • 1 eggs
  • ¼ C flour
  • 1 ½ Tbsp vegetable oil

Side salad

  • 60 g spinach
  • 4 tomatoes
  • ½ cucumber
  • 1 carrot grated
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar

To serve

  • 200 ml tomato sauce

Instructions

  • To make the chicken patties, combine all ingredients (except oil) and mix until just combined.
  • Form into small patties and set aside.
  • Heat oil in a large frying pan over medium-high heat. Cook patties for 4-5 minutes on each side to ensure the chicken is cooked through.
  • For the salad, prepare the vegetables and toss in a large serving bowl with balsamic vinegar and olive oil. Serve alongside patties with tomato sauce for the kids.

Notes

Diabetic Friendly: Eliminate the tomato sauce from this meal.
