Ingredients

Salad

  • 130 g mesclun
  • ½ cucumber
  • ½ red onion
  • 250 g cherry tomatoes
  • 1 avocado
  • 70 g sliced almonds
  • 1 lemon juice
  • 4 Tbsp olive oil
  • ½ tsp salt
  • ½ tsp pepper
  • 4 eggs

Prawns

  • 1 Tbsp butter
  • 1 Tbsp olive oil
  • 400 g prawns

Instructions

  • Combine all the salad ingredients in a large bowl. Toss the lemon juice, olive oil, salt, pepper.
  • Boil eggs over a medium heat for 6-7 minutes. Shell and slice the eggs.
  • Heat butter and olive oil in a frying pan over medium-high heat. Season prawns and fry for 5-6 minutes.
  • Toss eggs and prawns through the salad and serve.

Notes

Diabetic Friendly: Skip the butter in this recipe to reduce the saturated fat content of this meal.
