Ingredients

  • 500 g chicken breast
  • 1 tsp salt
  • 1 tbsp srirachi
  • 3 C buttermilk
  • 3 cloves garlic crushed

Chicken coating

  • 125 g flour
  • ¾ C cornflour
  • 1 ½ C breadcrumbs
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 tsp paprika
  • 2 tsp garlic powder
  • 1 tbsp onion powder
  • ½ tsp cayenne pepper

Fries

  • 60 ml vegetable oil
  • 500 g frozen chips

Coleslaw

  • 450 g bag of coleslaw

To serve

  • 8 gherkins sliced

Instructions

  • Place the chicken in a large bowl and toss with salt, crushed garlic and sriracha. Next, pour the buttermilk over the chicken, cover and refrigerate for as long as you can, or overnight.
  • Preheat the oven to 190°C.
  • In a large bowl, whisk together the remaining coating ingredients. Remove the chicken from the buttermilk and dredge in flour mixture, shaking off any excess flour.
  • Place the chicken on a lined baking tray and into the oven to bake for 45-50 minutes or until the chicken meat is no longer pink and the juices run clear.
  • Meanwhile, place the fries on another baking tray and in the oven to cook for 20-25 minutes or until the fries are golden and crunchy.
  • Prepare the coleslaw by combing coleslaw with dressing provided.
  • Assemble the burgers with a piece of chicken, a layer of coleslaw and sliced gherkins. Serve burgers with fries.
