Ingredients

Lamb kofta

  • ½ onion
  • 2 garlic cloves
  • 1 Tbsp parsley
  • 1 Tbsp dill
  • 1 tsp ground cumin
  • 1 ½ tsp salt
  • ¼ tsp pepper
  • 500 g lamb mince

Tabbouleh

  • 1 lemon juice and zest
  • 150 g bulgur wheat
  • 2 C parsley chopped finely
  • 2 C mint chopped finely
  • 2 tomatoes diced
  • ½ cucumber diced
  • 5 spring onions sliced finely

Instructions

  • Preheat BBQ on high.
  • Prepare bulgur wheat according to packet instructions.
  • Combine all the lamb kofta ingredients in a large bowl. Mould into sausage shapes about 2.5cm thick and thread onto skewers. BBQ for 6 minutes until cooked through and brown on all sides.
  • When bulgar wheat is ready, toss with lemon juice and zest, parsley, mint tomatoes, cucumber and spring onions. Serve alongside koftas.
